First Day of Winter

Let's talk about food prep for a minute. One of the most valuable things I do in my week is sit down and decide what to eat. I make a menu, make a shopping list and that's where food prep starts. I prep half a week on Sunday and half on Wednesday. This is what works for me. You may want to prep for the whole week and just do it once. Sometimes I don't cook the food but I wash, cut and portion everything so that when I'm ready it's super easy.

The holidays are here! Enjoy your favorite things. Focus on memories and not just food. It's all about portion control! You got this!

On a more personal note it's been a crazy busy month for me. I started an amazing new job. I enjoyed the thanksgiving holiday with my family. I will have all my kids on Christmas day and I can't wait for the memories, fun, and christmas magic!

healthy pumpkin chocolate chip cookies

My toddler is obsessed with cookies. Here is an easy, healthier, option for cookies thay are sooooooo good.

1 can pumpkin  (small can)
1 box spice cake mix
Chocolate chips (more or less depending on your preference. I like the mini Chocolate chips but use whatever I have)

Mix it up and bake 350 for 10 mins. I like to make them small and use the small scoop from pampered chef. You may need to adjust cooking time depending on size.

If I do eat these I count 3 as 1 yellow and 1/2 blue.

I lost 12 lbs in 21 days on #21dayfix

overall wellness

There is so much more to health than weight, diet and fitness. Mental clarity and well being is something I have been really working on this past year. I have GAD- general anxiety disorder. Some of the things I do to calm my anxiety:

Color
Diffuse Essential Oils
Meditate
Writing

I've been very stressed this week and sick. So I spent time before bed to color and do some yoga.

Apple Cinnamon Oatmeal.... yummm

Happy Tuesday!

This morning I made a super delicious oatmeal. Here is the recipe...

1 cup water1/4 cup apple

1 apple, cored and chopped (I used a granny smith)

2/3 cup rolled oats1 teaspoon ground cinnamon

Combine the water, apple juice, and apples in a saucepan. Bring to a boil over high heat, and stir in the rolled oats and cinnamon. Return to a boil, then reduce heat to low, and simmer until thick, about 3 minutes.

I counted this as one yellow and one purple for #21dayfix.

workouts are hard

You're not going to wake up with the body you want. You have to work for it. You might have to change your lifestyle a little bit.

Workouts are hard for me. Most days I want to give up. I do t have perfect form or execution. I have to modify every single one. But every time I do just a little better than the last time. And that's what it's all about.

day 1 dinner: taco stac

Dinner recipe
Taco Stack

Makes 2 servings

1 teaspoon of extra-virgin olive oil1 1/2 cups of ground turkey1/4 cup diced onions3/4 cup diced tomatoes1/2 cup canned tomato sauce, low sodium taco Seasoning, 1 cup of shredded cheddar cheese 4 corn tortillas

Heat up the extra virgin olive oil in a pan.  Brown the ground turkey and cook the onions at the same time.Add the tomatoes, tomato sauce, and seasoning mix.  Stir and let is cook on medium heat for 5-10 minutes, stirring occasionally.Start your stack by placing 1/5 of the ground turkey mixture at the bottom of a baking sheet.Top the meat with a corn tortilla. Then top with 1/4 of the cheese and more of the meet mixture.  Do that two more time until you have 4 tortillas in the stack.  Top with remaining meat mixture and cheese.Bake at 350 degrees for about 20 minutes.Cut the stack in half to get one full-sized adult serving.

* Serving Suggestion:  Make a salad out of romaine lettuce, fresh diced tomatoes, chopped sweet bell peppers and chopped cucumbers.  Top with fresh squeezed lime juice.

*Freezer Meal: Make as directed but make the stack on top of a piece of tin foil instead of in a baking pan.  Wrap up the stack and store it in your freezer.  Then defrost and bake as directed.

Remember you can make adjustments to your liking!

Even luke liked it.
